I am planning on building a wooden dashboard and console for my MK4 factory five cobra. Anyone have stories to share on the subject ?

Do you mean wood covered with leather or vinyl, or the wood as the visible surface?

my father-in-law made a cherry dash and cherry center column to cover the tranny tunnel.
for the dash, he planed down the cherry and we basically glued it to the fiberglass dash plate. i have a few pics in my profile

I think its the way to go and really makes the interior like Snowsnake says!
