Start it once a week, let it come up to temp and then shut it down.
Make sure your antifreeze is good and there is a bit of stabil in the fuel.
These are if you are not going the "Do Not Touch" route.

I agree with Tru, except I try to take it for a ride at least two or three times a month when the streets are dry. Make sure to add Stabil to gas every time you get gas.
Regarding mice ... fix all the holes and cracks in your garage walls, or get a cat!

Moth balls will not keep mice away! Moth balls are napthalene which is a fumigant designed to work in an enclosed area and you don't want to be breathing it. Put it up on jackstands and place glueboards around the jackstands. That should catch the little buggars before they get in the car.

Probably don't need the jack stands if just putting it for the winter. If you do, be cafeful about stressing the suspension from the wheels 'hanging.'

If you don't want to use jackstands be sure you pick up the glueboards before you drive over them! They wouldn't be much to peel off your tires or fenderwells...lol

For you "AZ" people, that is when the temp is in the double digits.

Cover your the ends of your exaust pipes. Critters like to crawl in there. If you are worried about mice use decon. Do not start it unless you plan to let it run for at least 20 miniutes. Starting it and running for only a few minutes does more harm than good. Keep the doors and trunk slightly open to prevent the seals from being compressed in the cold climate. This is not really that big of a deal but it does not hurt. I take the battery out and keep it charged.

Do not cover the car. It just gives the little bastards a place to hide.

Do a search. This topic has been discussed sevral times, including the pros and cons of starting the engine once in a while. Personally, I never start an engine once it has been shut off for the winter.
