what dipstick do you use for a canton roadrace oilpan (428 fe)?

Anything you can make. I used on from a junk yard, it was fom a Dodge Intreped that is a flexable tube. Check out Lokar, they'll have one that wiil work.

I used the one that came with the engine. I had to put a small passage hole in the windage tray and make sure it wasn't rubbing against the crank.
I know the amount of oil required for the engine so I fill it a quart below capacity, insert a dry stick and score a mark. Then fill it to max capacity and score another mark on the stick for a high-low overall reference. I have the same pan you do.

I did the same as lineslinger but, the included stick was in the way of other accessories. Like he mentioned, make sure you cut enough of the windage tray away.

i didn't install a windage tray, is this a mistake?

Its not a mistake, just a choice.
If you aren't going to be running prolonged high RPMS/racing its not that big a deal.
It helps keep the "free floating" oil in the lower oil pan area concentrated in the pan by subduing splash and frothing.
I did it on my initial build as I already had the engine torn down and it was just another little bit of insurance and yet another place to spend money on the beast.
