I have not looked into the fitment of a LS6/7 engine.
If it is no larger than a 351, I would think that one could be installed.
Of course you would have to make bespoke headers and other bits.
We decided a couple of years ago not to do the coupe. The body had too many compromises that we were not willing to address.
If we were to do something like a coupe, it would be a in-house design that was modern, something like this:
