So what do you think? Convex on the sides? Convex or flat for the rear view?

Convex is definitely going to give a wider area of coverage. The downside is there's going to be a little distortion with a convex mirror. Convex for the side mirrors and flat for the rearview seems like the best approach.

Could you polish the brushed alum version to match a polished car?

Franklin, I got the two 300's from Finishline and have them mounted up. I haven't taken any pictures yet, but the brushed aluminum versions look like a good contrast to the polished body. Plus, I think the two brushed stripes help keep them work. I need to get more time with them just to make doubley sure.
