What's the max torque that you would see...

...in a steering shaft?

I see steering shaft u-joints rated for 350lb-ft of torque....Would there be that much torque under a bump-steer situation in a street car?

I'm trying to design a set of flanges to couple my steering shafts together....Needing to know this so I can spec what size and grade bolts I will need.

I purchased my steering shaft and couplings from Shell Valley, have had no problems at all, I coupled it up to a Flaming River rack and pinion, works perfect, I don't know what torque the joints are rated for, but I am sure if you contact Shell Valley they can tell you.
