It sounds like its your clutch. Is it chattering?

If it has a stock Mustang gas pedal, throw it away and get one from Russ Thompson. FFR Throttle Pedal at the MK3 Roadster Shop of RT's Custom Cobra Car Parts
When I got my car it had the Mustang pedal and it was really an on and off switch. Changed it out and now all is good.

Just a thought... as its hard to tell online from your description but... possibly a combo of things going on here.
ie: A light fly-wheel, with high compression engine, and 4.xx rear end ratio all adding to create the whiplash in 1st.

The engine itself may not be the problem...

PS: welcome to the forum & good luck sorting...
I hope its a simple and cheap fix for you.

No chattering on the clutch it is fine when I start moving in second and third. The pedals are stock it seems did it make that much of a difference?

It's a matter of the pedal opening the throttle, the engine begins to rev up, which moves the alignment of the linkage to the throttle plate, closing it. The engine rocks back, the throttle opens up, and if it gets really nasty, the swings in rpm get more severe.

If the linkage uses rods, check to see that as the engine revs up, the throttle plates don't move more. If cable operated, the cable housing should have enough slack to prevent it affecting the plates. Once the plates don't change from the engine moving, the problem should be greatly reduced.

Also check the motor mounts for looseness - they should control most of the motion, and on some installations, it may be necessary to simply chain the motor down on one side to minimize it.

Thank you much Now stupid question number 2 how do I know if it is a mark2 or mark3 to order this pedal? I have looked everywhere on this car Jesus this is going to be one big learning curve.

Here's my 2 cents.

Who designs a rod operated throttle linkage that opens and closes the throttle when the engine mounts flex?

What a PITA to drive a car like that.

Redesign your linkage or go cable operated.

Redesign I am having trouble figuring out just the basics. Reading and reading some more about this car daily. Baby steps I know it and I think the car does too.

I am just guessing but I doubt if you have a mechanical rod throtle. However, it does sound like you may have a seriously low geared rear end. 4:10 or maybe 4:56 or something although the problem could still be your clutch.

figure out what transmission you have as well as what rearend gears you have. If you need help figuring out how to guestimate the ratio of your rearend , go to google and enter "calculate rearend ratio". It should give you several options with pictures.
