Call Keith Craft. He will know if someone in your area tunes professionally.
In the Dallas Area, there is a little guy in a little pickup that tunes. He has an enormous tackle box-looking thing that he brings to the setup. An hour later you are rolling down the road in perfect tune and you never have to adjust them again.
Gotta be someone like that where you live. KC would know.
My EFI 8-stack runs perfectly, so can't be more specific in helping you. Hope it all works out.

I worked on it all day yesterday. I didn't shorten anything or add washers but it seems to be running pretty good. I am at least close enough to use the LM1 a/f meter for the fine tuning. I ended up with a similar tune to many other here on the forum.

idle jet 65
idle holder 80
main 160
air corrector 150
f7 tubes (f16's just wouldn't work)
40 exhaust but ordered a 55
40 chokes
mixture screw 3/4 out

There is a point somewhere between 2000 and 3000 when the tone changes but that is OK for now. There is no popping in the pipes or "sneezing" through the carbs. It really doesn't have a stumble anymore, just a point in there where you can feel it not giving you 100%.

The casings are definitely different but they all vary a little. The Italians are not exactly the same and the Spanish are both just a little different too. I bet if all of us blue printed our Weber's we might find that there might be a large acceptable margin of error.

As some of you will recognize, I have been doing the Weber issues for a long time as well. I have learned a little along the way as well. The Spanish Webers are indeed different. The idle mixture screws for example are physically different with different diameters and taper. Small amounts but it matters. I have found and others have confirmed that these carbs prefer the mixture screws to be turned out 1 1/2 to 2 turns instead of the gospel 3/4 turns!

I have the Spanish ones and mine are set for about 1 1/2 to 1 3/4 turns. Smooth idle and no backing down backfires. Go with what works for your car. The mix of both nations may be a challenge to figure out but should be doable.

I'm sure this is not what you want to here but it's an option anyway. I have 4 only "NEW" made in "ITALY" unused unmolested late 60s - early 70s 48 IDA carbs. My father has moved on and I'm selling to help with my mothers expenses. I have one solid reasonable offer at this time and he's been informed I will make my decision by end of next week. I've spoken to and sent pics and info to a few Ford Cobra-GT40 professionals. Its only reasonable these individuals have a fair opportunity to consider their value to them.
