Is the sending unit seated in the transmission good? It sounds as if something is loose with the pulses jumping around. I have VDO gauges and used a Ford E9TZ9E731A sender which worked fine....

Be sure you don't run the master cylinder dry during the bleed process. I used the mighty vac and it worked great but it does drop the fluid quickly. Bleed the longest lines first
