I suggest you talk with Patrick at ProSystems to help you make your choice on which carb.
We went through several manufacturers/sizes/models of carbs while my engine (when first built) was on the dyno (several times over a couple of weeks) while resolving carb and cam issues.
The final choice was when I talked to Patrick at ProSystems. He asked me to complete a detailed spec sheet on my engine:

After talking with me and looking at my spec sheet, Patrick decided on a Holley 1000cfm 4150HP, which he modified with his "magic" and speciality parts. Initially I was concerned the carb would be too large for good low-end street performance. I should have known better....this guy knows what he is doing! The carb was amazing. Bolted it on the engine on the dyno and the only thing we had to touch was a slight tweek to the idle screws. The jetting and air bleeds were absolutely perfect. It has been great on the street with good low end response. Like I said....this guy knows what he is doing!
