Personally always look at the plugs,and seat of the pants performance.The way the engine performes,off idle,mid range,and near top end.Jetting is always trial and error.Over the years always using Holley carbs,my tuneup parts are fully stocked.Always do jet changes one size at a time.Assuming your timing is right,the advance curve is close,etc.
