Rat Man, Talk to Patrick at ProSystems. He'll build a tremendous carb for your exact application for not much more than what you'd pay for an out of the box HP Holley. I know that some people have good luck with Barry Grant carbs but there has been a whole lot of grumbling about them the last couple years. Poor performance, poor quality control and poor customer service seem to be the main gripes. Sticking with a carb will be much easier and cheaper and look more "correct" but it will still have the altitude drawbacks all carbs suffer from, to one extent or another.
