x2 on that pulley setup, take it back to stock and work from there. New gauges/senders can be the culprit so get a $50 Infrared tester like this:

Its pointless to let that engine get to 230F repeatedly because even at 200F at idle something is wrong. Your car shoud idle at 185-190F all day long if its set up right.
