I really customised a car around a big and tall customer. Some of the tricks we used were narrowing the trans tunnel which widened the footbox, adjusted pedal spacing, custom exhaust header around that, raising and lengthening the steering to get it away from your knees. With the seats he had made up some cushions that looked like seats and they went against the bottom and back of the cockpit which really got him down and back. I have a 427 body style here right now with 351 and 5 speed for sale. I can start next week customising it to you.
