One of the reasons for using carburators is safety. A carburated car can use a mechanical fuel pump mounted on the engine. These pumps are usually low pressure. In the event of a crash the pump stops pumping when the engine stops turning. Thus fires are not continuely fed fuel. With injection an electril pump is usually used to push fuel from the tank to the engine at high pressure. If there is a wreck there is a chance the pump (being electric) may continue to supply fuel and thereby fuel a fire.

BTW - The WWE has nothing on NASCAR.
