Yes, they can improve MPG, by metering the fuel more accuratly for each situation. A carb has 3 metering circuits, and is dependant on vacuum signals. It is not capable of adjusting for altitude, weahter, tep, etc. EFI has hundreds of fuel points, and can adjust for all those variables.
How much depends on the engine, it's state of tune, the EFI tune, use, etc.
My 427W has high compression and a huge cam, it makes around 600hp and on the race track it's a real monster. I drove it to Jackson Hole last summer. Had a great trip, it ran great on pump gas, and got 20mpg. On the street it's just a real joy to drive.
