Kim Barr/Garland is the best man around here for this, BUT he's the pricy-est! You will not break anything that he works on. He will throw away bits and pieces that others would say are "good enough". Big dyne room to test and break-in anything that you want (long block).
Rob Camp at C&S/Plano can ship your motor up and back to Keith Craft in Arkansas for $0. That's how I did my KC-built stroker motor. Reasonable $ for work--good communication.
Avoid Plano Machine and ET Performance. Because they offer machine shop services doesn't mean that they are good machinists.
I liked a motor that Tim Allen in south Dallas did for me. Never got into or tested the full potential of the motor's extremes, but the machining was absolutely perfect.
Around the road racing world, David Fersthand in west Fort Worth is meticulous. Usually he's building radical motors with radical lift cams and high rpm redlines.
Call Carl Janin at RUFF Autocenter in Carrollton (214-269-1577). He is former Audi/Lambo/Porsche expert, races GT-1 Mustangs, and might know a high end shop close to you that is small and good.
