Most everyone goes with mild steel and ceramic coat inside and out. Once coated they won't rust and they should last 20 years give or take. Stainless is less commonly used because of the cost as well as tougher to bend if you need a custom job (which is also more frequent with these cars and different motor selections). Stainless will also get hotter than ceramic coated mild steel so you need to think about possible heat soak/thermal issues that may occur with your hood ... my 2 cents.
