There are some myths about EFI, especially with a big cam.

The basic fuel map can be simply throttle position and RPM. That along with careful tuning of the accel enrichment will get you a pretty good running car.

If you can add a secondary load, then add in a MAP sensor. When you apply a small load - like pulling a small hill - that won't be enough to trigger the accel enrichment, but the engine would run a little bit lean. Adding a map load will fix that and prevent a bog there. Otherwise you just have to run it really rich all the time.

Self learning works pretty good - to a point. But it still leaves holes that need to be filled, and bumps that need to be smoothed. You'll also want to make small changes here and there for drivability, cold start, warm up, hot weather, al;titude, etc. With good software and patience, you can get the tune really close. To get it perfect - especially at the high rpm ranges - a dyno will really help.
