Ski boats see a lot more water, often salt water. It's my understanding that you can get wool wet as long as you let it dry naturally. Most of the new dyes have UV protection so it shouldn't fade too much over time, as some of the older wools did. Not sure if it's any better or worse of a heat or noise insulator, but Wilton III does have a rubber backing so should be pretty decent in terms of sound. You can put anything under it, same as nylon, and I will use Cool It or Dynamat. One advantage of wool is that it is doesn't burn easily.
