I'm in Louisiana and I don't think you'll have a problem with no choke....My Demon and the Holley on my street car do not have chokes,in the dead of winter when I crank them up all I have do to is feather the throttle for 30 seconds, then put it in gear and roll the car forward about one car length,putting a slight load on the engine and then they will idle fine............
