The MDF will eventually break down and start falling apart ( it sucks up moisture like a sponge and swells), unless you completely cover it with a sealant before you install.If you don't you'll find after a time that instruments and switches will start moving around and eventually fall out.
Best once you have established all guage and switch positions, use the mdf to trace onto 5 or 7 grade plywood.
