Slowy,

Regarding your Oil Pressure sender - as it is a single wire sender your sender needs to have a good earth - I notice you have a lots of thread tape - just check you have zero ohms resistance from your oil pressure sender outside can etc to the engine block etc. Quick test to see if that is the problem would be to grab a bit of wire and by hand connect it between the eng block and sender outside metal etc and fire up engine and see if that is better?

Regarding your Oil Temp sender - similar thing about earthing but also I notice it is on the "end of a stick" and not "inline with oil flow going past it". Might not give you "timely" temp readings.
