I don't know about other FE's, but my engine simply will not run (at least without fouling plugs) below 180°. I have to let it warm up to temp before taking it out on the road or I'll foul some plugs for sure.
What bothers me is that lately (within the last season) I've noticed that the temp must get to 200-210° before the stat opens. When it does open the temp drops immediately to 180° but, I don't like putting my aluminum heads (and head gaskets) through that kind of thermal shock. The thermostat (Stant) has been in there about three years and may be getting tired.

Scott, I hope you're right about the Chrysler stat from Jegs, I just ordered two of them. I like the fact that they claim to open within about 2-3° of their rating. I don't think I need the high flow feature, but it can't hurt.
