I haven't had anything to do with the latest styles of vinyl, so my opinion is based on the old stuff.
Here are two interiors, both with 30+ year old trim. First one is vinyl, second is leather. If you prefer your trim to stay "as new", the vinyl is amazing. It has held up to the years really well.
The leather has more creases and signs of wear. It's softer and slightly cooler to sit on. It's more likely to show little water stains from rain or over zealous car washing, but these wipe out.
For something that's a bit more forgiving to live with, the vinyl is hard to beat. The leather is perfect if you like your car to have some character and patina over time.
