I can only speak for the early square tube manual, it seems good at first, but when you are actually into the build, it isnt real flash.
It does supply info regarding what donor parts to get, and part numbers, I think there was even some bolt tension specs in there.
I suppose it will all depend on how much assistance you need, and also the older builds (multiple donor/supplier vehicles) there is a large scope for variations.
But a kit like the Pace or I guess the F5 cars, because all the items are the same, it is a bit more like a production line product, so variations are much less, so it can say "run wiring loom along right sill and through 32mm hole into engine bay" but a more donor kit may just say "run wiring harness from cabin through firewall and into engine bay" (you need to figure out the how and where)
It is comprehensive, but not specific.
