Don't mean to beat you up, but that is far to generalized a question to answer with any degree of accuracy. The material covering the liner, be it steel braid or nylon, is only part of the equation and differs widely with different brands.
My suggestion is to pick a quality brand (aeroquip, fragola) and use their product exclusively for both fittings and hose. Each manufacturer will give bend tolerances for different hoses in their specs. You want to avoid pushing the bend limits as best you can with proper fitting selection and hose routing.
EDIT: Forgot to tell you that most fittings are not interchangeable between steel and nylon braid. Not only that, but different brands of hose and fittings should never be used together. Always use the same brand for both. I suggest downloading and looking through the fragola catalog. It's loaded with tons of information directly related to what you are looking at.
