I don't know a huge amount about shock setup, just self taught thanks to sim racing... But what I have noticed with our car is that when we don't change from our "road setting" (which is roughly 3/4 clicks softer) to the "race setting" it makes a huge difference. I know at Wakefield a few years back having a run and the car had so much turn in it was practically undrive-able. The same is true when it's too stiff however, the car won't bite at all.

We have ours mainly setup in the half to 3/4 range and then tweak them to try and get the balance where we want it.

I have a few cheat sheets for setup from the iRacing (sim game) forum. Obviously, not all the setup changes in the sheets we can make. Generally we can do shocks, tyre pressure and with enough time and the right people ride height, camber, caster and toe.
