That's a lot of oil.
If it were me, I would disconnect the PCV, and cap it off so you don't have a vacuum leak, then bolt on a known-good carb and take her for another spin. I know that's not as easy as it sounds, but usually someone in your local Cobra club has a known-to-be-decent Holley 750 sitting up on his shelf to loan out.
