I have been down that road and still on it. My opinion is the only benefit the webers will give you over your current set-up is appearance. I hear many people say they like the way webers sound, my hearing must suck because I can not hear anything different over the exhaust or the wind from open cockpit.
Tuning can be quite extensive unless you just get lucky, 4 jets/bleeds per throat, 8 emulsion tubes, 4 accelerator bleeds. Average cost for each, $8
Linkage setup is very critical, I found that cross-bar style as your photo shows to be inaccurate.
However, once the carbs are set, there should be no further adjustments, they operate like any other carburetor.
