My simplest solution:

Add an arm on the throttle pedal (inside the footbox) pointing toward the driver, angling it down about 45 degrees. It should have a slot that will retain a cable end.

On the top of the footbox (or maybe on the throttle pedal frame) put a receptacle and stop for the cable. The angle should match the arm on the pedal. Depending on how the guide is designed, it may be necessary for a cable end be installed after the cable passes through the footbox.

With that setup, all you need is simple cable from the pedal to the throttle body.
