My opinion is that extending that rod by 2" could cause two problems based on the geometry of the pedal assembly. First, it would move the pedal both up and out making the pedal motion more up/down than forward/back. Second, it might change the angle where the rod meets the master cylinder causing more rapid wear on the cylinder walls. I think a better option would be to remove the pedal arm and weld a dogleg into the arm to move just the pedal aft by the desired distance. Any change to the arm made below the point where the rod connects should not affect the basic geometry motion.
