The easiest thing to do, is use a piece of 2 by 4 and with 2 bolts, bolt it in place this should give you allowing for the curve of the pedal you cut in the 2/4 over 1 1/4 inches. Try it FIRST and see if it works for you, then you can go to more permanent solutions.
