I would guess SAI does in fact offer the fiberglass body to allow those who wish to buy a SAI car at a more reasonable price, and some people may in fact desire a fiberglass body over the metal (sacrilege, I know). This is as most manufacturers do, provide a product that customers want to buy.
I guess thats why Superformance has the pedals supported from the top (along with other differances from the originals). Makes more sense to some people, and customers buy it from them!
