I think there are two issues here. One is the baffling--it can be removed/replaced, etc. The other issue is the size of your collectors. A lot of them are around 2", which is really the restriction--not so much the baffles.
I had my pipes done. This consisted of cutting them open and opening the collector to 3", then put racing mufflers in and wow, what a difference. Sound is acceptable at idle (barely) and quite loud under throttle. Made a lot more power.
