Moroso used to sell a universal chrome kit that you could drill a hole in the pan and install a dipstick using a compression fitting. Don't know if its still made by them but I assume other pan manufactures have similar kits. Make sure the tube gets mounted to a valve cover or something topside to keep it from vibrating loose at the pan and leaking. The kit I bought for my Jeep required lots of trimming everywhere to make it work.
Still another argument for a custom made pan in my eyes, on a car such as a Cobra, because catalog listed pans are at their very best compromised for our cars.
