Tim:

Only wire the switch to overide the fan operation. Wire the fan direct through the relay (not through the switch) so it will always come on if temp is reached when key is on. Switch would then be used only to ground circut and switch fan on regardless of engine temprature. This is assuming circuit is hot only when key is on, otherwise battery could be discharged with key in off position.
