i can only speak for Superformance, and no other brand of Replica.
Superformance adheares to a "Saturn-Like" firm sale price on their rollers. They also have specific geographic areas allocated to each dealer.
But while the roller is fixed in price, you can always do your own engine installation or engine selection if you really wanted to, the SPF dealers are very helpful in this regard.
When i bought my SPF three years ago, i thought about doing my own engine, even building it, but i have since realized that building an engine with reliabiltiy is something best left to the masters, and as for the installation costs, since it included ancillaries like driveshaft, battery, hoses, etc, that i would not save any money by having someone else or myself do it. Besides, that way i had a warranty, which i have never had to use.
The quoted price at least for an SPF roller is what it will take to put one in your garage.
When i got mine, my wife had given me an absolute ceiling on my cost. So i got the bare car, with a stroked 396 engine. But as the three years have passed, i have been able to put thousands more in modifications and changes to my car. You don't have to purchase the "final" car for you, you can do it my way.
Most of this is totally unknown to my wife.
