Ride,
The formula for carbs is generally: CFM=CID*MAXRPM/3456
With a 302 at 6000 RPM, this is ~525 CFM. 600 CFM is plenty. It will run better, cleaner, be easier to jet and more drivable with a correctly sized carb. An oversized carb gains very little if anything in peak HP, has a lower air velocity through the venturii making it mix less completely at lower engine speeds, reduces throttle response, and makes less power at lower revs.
Mr. Fixit, you should write a book of what you know - I'd buy a copy in a heartbeat. You've forgotten more than most of will ever learn.
