Not enough information to make a recommendation. Demon has a spec sheet that you can fill out and they will recommend a carb. Hard to go wrong.
Ford testing back in the early seventies showed a 20 HP increase just from switching from a 750'ish carb to a 830 carb on a stock high performance Cleveland. So to much? Probably not. Would you want to live with a 830 for a driver? Probably not. Basically, you need to provide a LOT more information for any one to make a good recomendation.
