My $0.02

If I was you and was a little short on cash get a good EFI 302 for two reasons. #1 you live in high altitude so it will compensate for the thin air. #2 you can always strap a supercharger on and then you will think you have a big block car with the lighter weight of a 302.

There are more than a few stroker 351's and big block cobras that have been smoked by a 302 car. I have a magazine that states the fastest "STOCK"Ford ever tested by their magazine was a 289 Slabside car back in the early 60's. The 427 Cobra was actually slower but they did say the 289 car was probably a ringer but still it was faster than the big block car.

I have a Hunter with a 302 and for most all driving it is fast enough. My motor is almost a stock Explorer motor with a Holley 600 on top.
