I used that opening for my temp sensor and plugged the other.
BTW...the pluged opening is a great place to fill the block with coolant to save burping time.
The best plugs are anodized red/blue/polished or stainless from any race shop. the have a hex head and will screw flush to the intake for the look. The threads are typical plumbing threads however. The water pump can be plugged using rubber caps available at any auto parts in the "help" section but the best thing to do is thread that spout and install another anodized fitting with paste sealant. If pump is off it's a 10 minute job. The thread tapping can be done with the pump on if it is packed properly below.
