They also give a more even mixture across the cylinders. On a single carburetor manifold for a V8, the middle four cylinders are always running a bit richer than the outer four cylinders.
The Webers provide each cylinder a more uniform, typically better atomized mixture which makes more power and allows you to safely run with more compression and/or spark advance.
