Default Engine DE-tuning!

Ok, this may be a strange question, but is it possible to easily DE-tune an engine to make it less powerful?
I've got a 408 stroker (http://www.cobraclub.com/classifieds...7&cat=8&page=1) that puts out 500BHP. It's not going in a cob, but rather a mid engined car that would mean spending BIG money on a gearbox. Could just changing something like the camshaft enable the power to be dropped down? Would a smaller carb (it's currently fitted with an 850cfm double pumper) help or would it just make the engine run too lean and damage it?
Any advice appreciated.
