I think I posted the world upholstery link... I have samples of different materials from many sources. The two that are tops are of course Wilton Wool and Finetuft Velour. Obviously, neither are a loop. Both have a very nice feel to them. They both also have pros and cons. Wool can stink and pucker but has a nicer feel to it. The Finetuft Velour does not have those issues and is very durable. It does not have the durability issues mentioned (as compared to wool) and is used in many of the worlds finest cars (the best use one or the other). A tip is to buy some extra and have it sewn into custom mats. Sewn in 'heel' pads in high wear areas can be nice as well. For installation you can glue it or place it in with snaps or velcro. Snaps and velcro have obvious advantages for cleaning and drying... up to you. If you go the snap and velcro route, you can also hide some access panels for those hard to reach spots and hold them in place with Dzus fasteners (the access panels that is). Use a 3/8" rebounded foam for those areas where you want a little padding. Don't forget a drain holes. Just pour some water in the empty cockpit and see where it pools... that is where you put drain holes! It is a cut and sew process and any decent interior shop can do a nice job.
