When I got my car insured 7 years ago, I just added had it added to my existing policy with "agreed value". I've got a provisional policy 5K annually, car events etc.... the Interpretation of that is pretty open and the sprirt of the policy is that your not making your car a daily driver. Premimum is below $500/year and I have not found the 5K limit an issue (and I do drive it quite a bit,events in norcal & socal weekends...). No matter which insurance you opt for you will need an appraisal to validate your cars value so you should go ahead and get that while shopping around for insurance.

Since it's been 7+ years for me and this has got me thinking that I should probably get a updated appraisal myself.
