A Weber owner I have spoken to is using the Cobra cross tube type. He tried to use one of the "in hose" thermostats, without success, it blew the hose apart. So he just is running it without the thermostat. I'd go for the other manifold.

I also am researching putting webers on my 289. Let me know how it's going for you. I'd like to share notes, experiences with you. (zrichter@austin.rr.com)
