Umm.... They did set a new record in their class, but not for the fastest car ever at Bonneville.... They missed that by 400+ miles per hour.

I think they have park rangers that stop people from running flat out unless its a sanctioned event. (Not sure how stringent they are about that...)
The big problem is that the salt has to be groomed to make a good high speed surface to run on. The crust is also fragile and you can break through. If it rains or you go at the wrong time a year it can be a big mud pit and you can really get stuck. Check out this link to see what happened to Coddingtons crew when they went out on the salt:
