I am using an 850 because that is what Mike at Shelby recommended. It finally goes to the dyno next week and we'll see if a smaller carb is in order. Actually, having never built an FE before, I just hope it won't blow up!
Regarding the pan gasket, I tend to agree with your logic. One less thing to worry about I guess.
