You can use a rpm/gear ratio calculator and figure out where you'd be at different speeds.

I had a '73 Corvette with a Muncie 4-speed. With 3.55 gears, it was just fine on the interstate. As a matter of fact, I drove it for 6 hours on interstate from Louisville to Cleveland.

My vote would be 3.55 gears.
